Technically this dessert has zero cream and zero animal products which makes way for chocolate fruity goodness! I especially like the combo of cherries and blueberries. The play of cocoa, the sour of the cherries and the sweet of the fresh blueberries creates a little bit of heaven in each bite. This makes one serving … double, triple or etc as needed. Enjoy!

Ingredients

2 Bananas (peeled and frozen)
1/2 Banana (room temp)
1/4 C Cashews, raw (do not soak)
2 TBSP Cocoa Powder, non-alkalized
1/8 C Sour cherries, dried
1/8 Blueberries

Directions:

Place banana’s, cashew and cocoa into the blender. I use a refurbished Vitamix, see favorites for details. Using a damper, push the mix back to the blade until the consistency of ice cream. The cashews often have little pieces which I love for their crunch.

Scoop into serving dish and mix in sour cherries and blueberries. Enjoy with zero guilt and a ton of pleasure from God’s good garden.

Tip: Store nuts in the fridge or freezer. I store mine in the freezer and add directly to recipes or top on my salads.
