When I really can’t shake the want for chocolate — these do the trick. They aren’t low calorie but they are plant based and sooo much better than alternatives that don’t support your goals. Want lower calorie with all the chocolate? Try the cocoa nut balls. Both freeze well. Enjoy!

Ingredients

  • 2/3 C Dates, pitted & soaked
  • 2/3 C Cashews, soaked
  • 5 tbsp nut butter (I like almond)
  • 1 C cocoa powder, unsweetened
  • 3 tbsp vanilla powder
  • 1 C raw almonds, ground (for rolling balls in) – optional

Directions:  

Pre-soak dates and cashews in two separate bowls. Just over with very hot, boiling water. Let sit 20 minutes.
Drain cashews & dates. Put into food processor and blend into a paste.
Add nut butter. Blend til smooth.

Add dry ingredients. Pulse until just mixed.

Roll into 1″ balls. Roll in ground almonds. Tip: If your feeling a deep need for chocolate, roll balls in additional cocoa powder and skip the almonds.

Put on a silicone (or wax paper) baking sheet. Set in freezer for 15-20 minutes til firm. Serve.

I put these into the freezer and only remove the count I’m going to eat or serve. Super rich and with a small black decaf coffee … heaven.
